Meatball Stew

Second only to our chicken & sausage gumbo, this is probably everyone’s favorite meal we cook with Skinny Roux! We have started offering this as a sample at local vendor markets, and people are always in shock at how “normal” tasting it is!! This can be served over rice, or over riced or mashed cauliflower for a low carb option! In the photos below, we show the step of cooking the meatballs in our Magnalite pot. But a lot of times, we will do HALF of the meatballs in the pot, and the other half in the oven, just to get them done faster. You definitely want SOME to cook in the bottom of the pot so you get all of the good stuck-on parts that are left behind to make your gravy! The “trick” of adding the sliced smoked sausage (which adds AMAZING flavor) is something we learned from our friends, Rusty & Nicky, who own Radiant Artistry Photography!
